For most of us, it’s time to harvest basil. Unless you are harvesting the whole plant for a big batch of pesto, cut just above leaf clusters, as this will ensure continued healthy growth. To keep fresh for several days, put stems in water – do not refrigerate. (Refrigerated leaves will turn black.) You can freeze basil in ice cube trays: chop finely, put in tray and cover with water. Freeze. Pop frozen cubes into a plastic bag and store in freezer. These basil cubes can be used when making soups and sauces all winter long. Cubes can also be defrosted in a colander and used in salad dressings, herb breads, etc.
